The Role of Hygiene & Stewarding Manager:
Reporting to the Assistant Director of Food & Beverage, the Hygiene & Stewarding Manager will be responsible for overseeing the cleanliness, sanitation, and hygiene standards across all food & beverage and kitchen operations in the hotel. This role ensures the proper functioning of the stewarding department, maintains hygiene compliance, and supports operational efficiency in all back-of-house areas.
Key Responsibilities :
• Oversee the daily operations of the Hygiene & Stewarding department, ensuring all areas, including kitchens, dining rooms, storage, and back-of-house areas, meet the highest cleanliness and sanitation standards.
• Performs regular hygiene inspections in all areas of the Kitchen and food service areas and reports any wrong doings or areas of concern directly to the Executive Chef and Assistant Director of Food and Beverage
• Develop and implement hygiene and cleaning policies in compliance with both local and international health and safety regulations.
• Supervise and train the stewarding team, ensuring all staff understand and maintain hygiene standards, food safety practices, and operational procedures.
• Ensure cleanliness and hygiene of all kitchen equipment, dining areas, and F&B service areas, performing regular audits and inspections.
• Control and manage inventories for cleaning supplies, chemicals, and equipment, ensuring cost-effective usage and adequate stock levels.
• Collaborate with the F&B and kitchen teams to ensure all hygiene protocols are followed during food preparation, service, and post-service cleaning.
• Ensure strict adherence to health and safety guidelines, conducting regular inspections to guarantee compliance with sanitation and safety standards.
• Prepare and maintain reports on daily hygiene operations, cleanliness audits, and inventory control to ensure continuous improvements in service delivery.
• Manage waste disposal and recycling processes to ensure compliance with environmental sustainability standards.
• Lead and motivate the stewarding team, ensuring proper training and development opportunities are provided to enhance team performance.
• Act as the main point of contact for hygiene-related issues within the Food & Beverage department, offering timely solutions to ensure smooth operations.
What you bring :
• Proven experience in Hygiene management within a luxury hotel or high-end restaurant environment.
• Solid knowledge of food safety standards, cleaning protocols, and hygiene regulations.
• Strong leadership skills with the ability to manage and motivate a team.
• Excellent organizational skills and the ability to multi-task in a fast-paced environment.
• A keen eye for detail, ensuring that all areas meet hygiene and cleanliness standards consistently.
• Ability to work effectively under pressure and meet deadlines.
• Strong communication skills, both verbal and written, in English and Italian.
• A proactive and hands-on approach to problem-solving.
• Knowledge of operating cleaning equipment and handling cleaning chemicals safely.
• Flexibility to work all shifts, including weekends and holidays, as required.

Schedule & Hours : This position is based at the hotel and requires flexibility to work varying shifts, including weekends and holidays. The candidate must possess the legal right to work in Italy and be fluent in both English and Italian.
